Several types of chicken biryani

India is a land of various types of cuisines and one of the popular dishes is chicken biryani. According to some of the theories, this dish was brought to India by Mughals. There is another theory, which says that Alexander, the great brought this recipe to India. There are many ingredients and spices used to make this dish. In this article, we will discuss about various types of chicken biryani.

Lucknowi or Awadhi Biryani

This biryani was invented by Mughals during the period of 18th century. In this recipe of chicken biryani, rice and chicken are cooked separately. First, the rice is cooked in various spices and marinated chicken is added to it in layers. This mixture is cooked at a low flame in a pot sealed with flour.

Kolkata Biryani

During the British rule, Nawab Wajid Ali Shah was sent to Kolkata and he was the one to bring the recipe to the city. Since meat in Kolkata at that time was expensive, so they also added fried potatoes. The addition of potatoes made the biryani a different one from the Awadhi biryani. Chicken is marinated by using cinnamon, nutmeg, cloves, mace, and curd. Saffron and rose water are also a part of the recipe. This is the only chicken biryani recipe where you can find fired potato and boiled egg along with a large chicken piece.

Hyderabadi Biryani

Mughal emperor Aurangzeb invaded and captured the city in 1600s. At that time, Nizams were ruling the city and they prepared various types of recipes for the royals. Hyderabadi biryani includes raw goat meat or chicken, which is cooked with rice. The cooking is done till the flavor of meat mixes with rice. In order to add flavor, coriander and mint leaves along with fried onions are also added.

Malabar Biryani

This biryani is a specialty of Kozhikode and is cooked in dum style. Besides chicken and mutton, you can also find Malabar biryani with fish and prawns. Fried onions are added at the end to provide brownish color to the chicken biryani recipe. Dry fruits are fried and sprinkled over the biryani for garnishing.

Thalassery BiryaniIn this chicken biryani recipe, a lot of ghee is used along with chicken, mutton, fish, or prawns. Cooking of the main ingredients that is rice and chicken is done separately and later onion, ginger-garlic paste, curd, lemon juice and coriander leaves are added. Local spices are also used to bring aroma and flavor. The garnishing is done with sultana raisins and cashew nuts.

These are some of the chicken biryani recipe which people can enjoy in different parts of India. Cooking style and taste of all of them is different.
